<b>Prawn Patties:</b><br />
1/2kg of Green Prawns (Tails removed)<br />
1 handful of Coriander (Roughly chopped)<br />
1 Shallot or 1/2 a Red Onion<br />
1-2 Cloves of Garlic (finely chopped)<br />
1 Egg White<br />
A good pinch of salt<br />
<br />
<b>Asian Slaw: (Be sure to make the Slaw before cooking your Patties)</b><br />
1/4 Cabbage (Very finely sliced - You can use white, red or wombok)<br />
1 Baby Cos Lettuce (Very finely sliced)<br />
1/2 Red Onion (Finely sliced)<br />
1/2 Cucumber (Sliced into half moons)<br />
2 Carrots (Cut into Matchsticks)<br />
Herbs - I used Coriander, Vietnamese Mint, Mint, and Perilla<br />
<br />
<b>Dressing:</b><br />
<u>Primal Approved Mayonnaise:</u><br />
1 Egg<br />
1 tsp Dijon Mustard<br />
1Tbs Apple Cider Vinegar (Unfiltered)<br />
Cold Pressed <u>Light</u> Extra Virgin Olive Oil<br />
<br />
Juice of 1 Lemon<br />
Juice of 1 Lime<br />
Dash of Fish sauce (optional)<br />
<br />
<b><u>Dressing Method:</u></b><br />
- Place egg, mustard and vinegar in food processor and blend for 30 secs, with the motor still running slowly drizzle in olive oil, when you have your desired thickness stop adding oil (Make it a little thicker, because your lemon and lime juice will thin it down more)<br />
- Add lemon jucie, lime juice and fish sauce, blend once again to combine.<br />

<b><u>Patties Method:</u></b><br />
- In a food processor but 3/4 of your Prawns, Red Onion (or Shallot), Garlic, Coriander, and Egg white, and Salt.<br />
(If you don't have a food processor, just chop all ingredients as small as you can, and Mix)<br />

- Now Pulse or Blend your mixture, depending how fine you want your mix.</div>

- With the remaining Prawns I chopped by hand so I have different texture of Prawns in my patties. You don't have to do this, you can blend all of your prawns if you want a smoother texture patty.<br />

- Wet your hands (this will stop the mixture from sticking) and make Patties. I went for larger patties, but you could also make smaller ones for an entree or appetiser.</div>

- Heat a non-stick pan on high (Non-stick is pretty important, for these delicate patties). Now being Primal, we aren't meant to use Canola or vegetable oils. So I used Coconut oil and and dash of olive oil in my pan. The Patties should only take a couple of minutes each side depending on thickness.<br />

- Don't forget your beautiful herbs, add enough dressing just to coat your salad (not drown it). If you have left over dressing, using it as a dipping sauce for your Patties, that's what I did. Yummo!!<br />

Just made this for lunch, showed it off on Instagram and now I've got recipe requests.<br />
<br />
First and foremost I must give credit where it is due, I grabbed the Pulled Pork recipe and the BBQ Sauce recipe from the Primal Blueprint Cookbook, by Mark Sisson and Jennifer Meier. <b>Pulled Pork Recipe:</b><br />
1 Tbs of Olive Oil<br />
1.5-2kg Pork Shoulder (Bone in or out)<br />
1 small onion<br />
1/2 cup Tomato Sauce (I used the homemade Paleo Ketchup)<br />
1 cup of Water<br />
1/3 cup of Vinegar<br />
1 tsp salt<br />
1 tsp Celery seed (I used Celery Salt)<br />
1/2 Tsp Nutmeg<br />
1 Bay Leaf<br />

- Honestly I think you could play around with the spices, to your taste<br />
<br />
1) Brown meat on all sides in olive oil over Medium-Med High heat.<br />
<br />
2) While meat is browning,combine remaining ingredients and stir to mix well.<br />
<br />
3) Remove from heat and put everything into a dutch oven or casserole dish that has a lid<br />

4) Cover with lid and bake at 160c for at least 2.5 hours, 3 if your shoulder has a bone.<br />
<br />
5) Check halfway through to make sure there is plenty of liquid. I turned my shoulder over with an hour to go.<br />
<br />
6) Remove from oven, grab to forks and start shredding the meat off, if this is not happening easily then put it back in the oven for at least another 30 mins.<br />

In my blogging absence I have been busy, busy with school, work, planning my wedding and..... turning Primal!!!<br />

Lets Rewind a bit first. Over the last couple of years I haven't felt myself, I haven't felt that healthy, I was becoming more and more stressed and anxious. I was getting rashes, dry skin, acne, dandruff, cramping stomach, bloating and hay fever off the charts, plus I gained like 20kgs in a year and a half.<br />
I had had enough, and needed some help! A family friend put me onto a wonderful lady named Suzy who practised <a href="http://www.naturaltherapypages.com.au/energetic_medicine/Emotional_Freedom_Technique" target="_blank">Tapping or EFT</a> (Emotional Freedom Therapy/Techniques). Its a wonderful therapy that helped me at my breaking point of anxiety, body image issues and anything else I needed to nut out.<br />
At the same time I went had my allergies tested by a <a href="http://www.getwellhere.com/pdf/vega-testing.pdf" target="_blank">Vega system</a>, a non invasive way of checking for allergies, intolerances and sensitivities. I was given a print out of all the foods, preservatives, chemicals, dusts etc I should avoid. They also found that I had a high Candida count.<br />
Candida is a yeast in your body, everyone has it, but when it gets out of hand it can cause a huge list of problems which you can read up more <a href="http://www.return2health.net/articles/candida/candida-overgrowth-candidiasis-overview/" rel="nofollow" target="_blank">here</a> and <a href="http://www.thecandidadiet.com/whatiscandida.htm" target="_blank">here</a>. I was put on a Candida <a href="http://www.thecandidadiet.com/candida-diet.htm" target="_blank">diet</a>, for 2 months, basically no Caffiene, alcohol, foods containing mould (that in turn would add to the fungus already growing inside me) So mushrooms, blue cheese, packaged nuts. No sugar, no junk, preservatives etc etc. By the 3rd day I had such a headache, I was used to drinking at least 3 good cups of coffee a day (I was working as a Barista, so not much fun) but after that I just started to feel better, I started to drop a lot of weight, apparently the yeast has a biproduct it gives off making it very hard for you to lose weight. Lose the yeast, lose the weight. I started feeling marvelous and by the end of the 2 months, I was hay fever free...no bull. This was a hallelujah moment.<br />
After the 2 months on the candida diet, I was to basically avoid all the foods that I was sensitive/Intolerant. The list includes; Wheat, Preservatives especially those in the 620's (MSG being 621) Preservative 220 (Found in Wine, and basically any foods that have a shelf life, 220 prevents mould growth) Chemicals especially Sodium Laurel Sulfate which you find in your Shampoo and other things, Cows milk and a few others. So I went on search for a diet that didn't involve my no-no foods.<br />

And so I stumbled across the Paleo or Caveman diet. Basically eating as our cave man ancestors would have, before we learnt to grown and process wheat and other grains. I jumped in full throttle, dropped about 6kgs and felt awesome, but slowly slowly I started to incorporate no-no foods, til before I knew it I was eating out, drinking, snacking on preservative laden foods. Then Bam!!! Hay fever symptoms started again, rashes on my face, Candida was back, and a couple of kilos crept back on. Booooooo!!<br />

Fast Forward to now, I have studied Naturopathy a year at the Southern School of Natural Therapies, and love it. I'm getting married and thinking about starting a family next year. So I want to get healthy, I want both myself and my fiance to be healthy. I'm now starting to listen to my body, and know which foods it really doesn't like, Wheat and grains being the number 1 no-no.<br />

My friend referred me to a wonderful website <a href="http://www.marksdailyapple.com/">www.marksdailyapple.com</a>. Mark Sisson is the creator of the website and is an amazingly knowledgeable man. The lifestyle is the Primal Blueprint, like Paleo, but does allow a little bit of dairy and he even includes the types of exercise we should be doing, and this will shock you but its not an hour a day at the gym running your arse off on the treadmill (Shocking I know)<br />

I'm now on day 4, I have cooked 4 recipes from his cookbook, they are all delish and easy to do. More importantly it's the best I have felt in ages. A couple of months ago I would of written half of this post and nodded off on the couch, now I cant keep up with my typing fingers.<br />

This blog is beginning to remind me of my failed attempts to keep a diary every year. Start off strong and then peter off to nothingness. I do though, have a very valid excuse. I've gone back to school!<br />
At the end of last year, I'd had enough of my job and thought long and hard at my career.... If i'm not going to start up my own cafe then i'm not going to work for anyone else's. It's the same story at pretty much all the places I have worked over the years, work hard, very hard, for not a lot of money and not a lot of thanks, and crappy hours (yes weekends, I'm talking about you!).<br />
Look it wasn't all bad, I've met a lot of great people, learned some awesome skills and had a lot of fun along the way. But when the bad times out weigh the good........ well, you know the rest from here.<br />
So I enrolled in The Southern School of Natural Therapies in Fitzroy and have started my journey to become a Naturopath! Hurrah!!<br />
I wanted to do this course straight out of high school, but back then you had to pay everything up front, so being 18 with only a little part time job, coughing up $10,000 a year wasn't gonna happen.<br />
Its funny how things happen though, I feel I am right where I need to be, I've had more life experience and am more ready to undertake 4-6 years of study. This year I am only studying part time, and will go full time as of next year when I'll be married and have a hubby to sponge off... he he.<br />
Thats the other reason I've been M.I.A I'm planning a wedding.... and if anyone has done it before you know what time it can take...<br />
So be patient and I hope to soon post more regularly<br />

Ibiza was surprisingly more than to meets the eye! Yes we were there to sit on the sandy beaches and swim in the crystal blue water by day, and dance in the massively over priced clubs by night. I'm talking 12 Euros for small bottle of water ( $15 AUS) or 17 Euros for a Vodka ($21 Aus) WOWZA!!!<br />

Ibiza has a great history and great people who live there. Ibiza is really only operational during their summer, so the locals are all out to make as much money as they can in this period before the island pretty much shuts down during the cold winter.<br />

We had hired a car and did a day trip to the other side of the island, apparently were the locals and the very rich and famous frequent. Apparently Australian model Elle MacPherson has a mansion somewhere on the island.<br />

Now can I just say that Spanish Sangria is AMAZING!! I have it a few times in Melbourne but never liked it. This Sangria is fresh, sweet, zingy, spicy goodness... I should've asked for the recipe, but my spanish really isn't that great.<br />

And then it arrives... Unfortunately I didn't get a photo of the massive pan that hit our table. I was far too excited. The waiter kindly served us up a plate each and we got stuck in. I can honestly say that this has been the best thing I ever ever ever eaten!! Big call I know but its the truth. It was soooo chock full of seafood, seafood that was caught that same day and just below us in the crystal blue waters we had just swam in. Pipi's, Crab, Prawns, Langostines, and Mussels. The rice was cooked to absolute perfection. I could've cried. Everyone at the table was silent.. except for the occassional oooh's and ahhh's and Mmmmmmm's.<br />
Just about every day since we had this Paella I have craved it. I could always make a point of heading back to Ibiza one day to have it again, but I fear that it would never be as good and would ruin that lovely memory I have. I think its best to leave that wonderful tasty memory where it is.... I love food, and I love how good food can make you feel and the memory of the people that were with you when you had it. Lettuce, tomato, carrot, corn, egg, tuna, olives sometimes beetroot and whit asparagus. You always dress it yourselves with the standard olive oil and vinegar bottles on every table.<br />

1) Buy 1 chicken breast for every person you will be feeding<br />
2) Place the chicken breast upside down on the chopping board<br />
3) Place your non knife hand on top of the chicken breast to hold it firmly down on the board, bring the knife to the fattest side of the chicken breast<br />
4) Gently cut through the middle of the chicken breast roughly 1cm til the other side ( Your knife should not come out the other side)<br />

5) Now open up your Chicken breast from the cut and use your palm to flatten it<br />
6) Place chicken breasts on some plastic cling film, then place another layer of cling film on top of the chicken breasts<br />
7) Use a meat mallet, or pot ( or you could use a wine bottle) to bang down the chicken breasts to evenly flatten them out<br />
8) Your breasts should be nice and flat like pic #8 now their ready for crumbing<br />

One bowl of egg wash, whisk up 2-3 eggs you can add a little milk to extend the mixture. One tray of bread crumbs, the store bought ones are fine, we used them here. Normally I would make my own bread crumbs using some stale bread. Panko bread crumbs are excellent to use. You can also flavour your crumbs with any herbs you like really. We used dried Rosemary, but I really like to use fresh chopped Thyme, use can also add grated parmesan cheese.<br />

9) Place 1st chicken breast in the flour coating both sides, be sure to shake off the excess.<br />
10) A handy tip for not getting sticky hands is to use one hand to handle the chicken in the dry ingredients and use your other hand for the egg wash part.<br />
11) Next place that chicken breast in the egg wash and coat both sides, lift chicken breast and allow the extra egg to drip off<br />
12) Lastly put the egg coated chicken into the bread crumbs<br />

13) Be sure to fully coat the chicken, you can help by pressing the crumbs into the breast to make sure they stick<br />
14) Once you have finished with the first chicken breast, place it onto a plate and repeat the process with the remaining breasts. You now have Schnitzels...the first step to your Parmas.<br />

NOW FOR THE COOKING<br />

1-2) Heat up some canola or vegetable oil in a pan (these 2 oils have a higher smoking point and so are ideal for shallow frying) Drop a crumb into the oil, if it bubbles and brown the oil is ready.<br />
Gently place the Schnitzel into the oil, lowering it so it falls away from you so the hot oil doesn't splash back at you.<br />
Fry for at least 3-4 mins, check how your schnitzel is going by lifting up an edge. Your looking for a lovely golden colour<br />
3) Once you have the desired colour flip your Schnitzel over and cook other side to same desired colour<br />
4) Take out your Schnitzels and place them in an oven proof tray.<br />

5-6) Top Schnitzels with your favorite pasta sauce, plain tomato passata can also be used but wont give off as much flavour, a home made Napoli sauce is ideal<br />
7) Now top your Schnitzels with shredded cheese. I use 50% shredded tasty cheese and 50% shredded mozzarella cheese which I mix up in a bowl before topping. I think this is were a lot of people get this wrong. They either use all tasty cheese but then get not stretch in your cheese, or they use all mozzarella for stringy stretchy cheese but get not bite from the tasty cheese.<br />
8) Be sure to top the cheese higher in the centre of the Schnitzel for when the cheese begins to melt as we cook them it will stay on the parma and not end up all over your oven tray.<br />
Now place your Parmas in the oven for roughly 10 mins on 180-200 degrees,once the cheese is looking nicely melting place the tray under your grill to brown and crispen up the cheese, this step should only 1-2 mins<br />

Each kebab slightly differing depending on the culture, or religion of that country.<br />
My swedish friend Vicky who had lived in Barcelona for a few years insisted we visit a north african kebab shop while we were in Spain. She said that they were sooo much better than the ones we get in Australia.<br />

We had just sadly said good bye to Barcelona and caught the overnight train to Valencia. 8 hours of uncomfortable seating, noisy, snoring and farting passengers. But we survived to tell the tale, and eat again.<br />

Right on the corner of Valencia's main train station is this Gem of a kebab shop, Estacion Doner Kebab<br />

Why so great you ask? Firstly it in comes in a beautifully round turkish bread pocket, lots of fresh salad with tomatoes that taste like tomates. Delicious juicy chicken, then its topped with a garlic sour cream ( not your usual natural yoghurt garlic sauce) and an ever so slightly sweet tomato salsa. BAM!!! Kebab yumburgers.<br />
Bung in a couple of crispy salty chips (yes I mean ships in the kebab) and wash down with icy cold beer. For Aus $12 for 2 Kebabs, 2 chips and 2 beers.<br />

I'm back home in freezing cold Melbourne. My hope to keep you all updated on my adventures surely did fall by the wayside. What was I thinking...? With all the amazing food I ate and wonderful adventures we had, I would have to spend at least a couple of hours per day on the laptop. Unfortunately I chose more food and more adventures.<br />

So I asked Jake what he felt like and he said he was hankering for some Mexican, as you do when your in Spain. </div><div class="separator" style="clear: both; text-align: left;">So as we were walking it's as if the heavens parted and dropped a Mexican restaurant right on our toes.</div><div class="separator" style="clear: both; text-align: left;"><br />

Because we didn't want to over eat, Jake and I only ordered light ( ha ha..if you can believe it)<br />

We ordered a Nachos, a Tasting plate and Tomato bread.<br />
Now the tomato bread is your usual starter in Spain, and let me tell you its just fantastic. Toast some bread then squish the guts of a tomato all of it. Voila!!!<br />
<br />
The Nachos didn't look like much, but they were so wonderful. The salsa was fresh and my favorite was the coriander sauce they drizzled over the plate.<br />

The tasting plate consisted of amazing Jamon, manchego cheese, mixed olives and mini chorizos.<br />
The Jamon speaks for itself really, or should. But if you've never had it, it is fatty, melt in the mouth heaven.<br />
The cheese which was firm and slightly salty and went well with everything on the plate. The mini chorizos popped in your mouth and had delicious paprika flavour through them.<br />
Now let me get to the olives...My absolute favorite were these wonderfully dark green olives, I have never seen them before in Australia nor did I see them again whilst in Spain. They were almost a forrest green. I should have asked the waiter what they were called. Never have I ever tasted olives like this. This is how all olives should taste. They had been marinated in a little garlic and fresh oregano and biting through them brought a smile to our faces.<br />

So it seems my Aussie friend Danny has been converted to a right ol' London lad and informed us we would be having Eggy crumpets with maple syrup, bacon and chilli for brekky.<br />
"Whaaaaaaaaaat...?"<br />
Jake was thrilled at the thought of this, you see if Jake and I do a proper big breakfast on the weekend, you know your usual eggs, bacon, toast, hash brown, and grilled tomato. Jake loves nothing more than to smother it all in Maple syrup. Yep you heard right!!!!<br />
So that night it took a while to fall asleep, when I finally did the most amazing thing happened! I dreamt I loved the eggy crumpets with bacon...maple syrup and all!<br />
<br />
In the morning, Danny had a skip in his step and was eager for us to rise and sit around the breakfast table.<br />
Please let my dream come true........<br />

Everything on it was exceptional, what I enjoyed most was the Candied Orange segment stuffed with BBQ pork, I thought I would probably like the least, but it was an absolute flavour explosion! The whole idea of candied orange scared me, but when I bit into it, the orange flavour balanced out the bbq flavour perfectly. I could happily eat a whole plate of them alone<br />

Monkeys are everywhere, and in the Lonely PLanet book it states...beware of the Monkey's, they can bite!! So I was a big woos and got Jake to walk up in front. And whatever you do, dont conceal food in your handbag, cause they'll sniff you down and take what they like...and these monkeys will eat anything.....<br />

I wasn't prepared for this heat. I still had my trackies and long sleeve jumper on from Melbourne. As we slowly slowly neared the front of the line I had stripped off as many layers as I possibly could (without losing my modesty), finally after the obligatory finger print scan we were through the gates.<br />
Stepping out the through the Airport doors the heat and humidity slap you in the face, what a change from our bitterly cold melbourne weather. Quick must find air-conditioned taxi.<br />
<div class="separator" style="clear: both; text-align: center;"></div>We hailed a cab "Ahhhhh cool" and start making our way to Kuala Lumpur City Centre in what seems at lightning speed. I dont think it's customary to stick to speed limits in this country. As I stare out the taxi window, all I notice as far as I can see is Palm tree plantations, for what i'm guessing is the harvesting of 'Palm oil', I guess its sad to see as once this would've been a beautiful jungle.<br />
<br />
We finally arrive at our hotel at roughly 6pm, Jake and I quickly change out of out plane clothes and into much more weather appropriate attire and head on out for a wander.....and for a snack!!<br />

I tried the Soy milk and Black Jelly drink. Not bad, Jelly didn't have much flavour, and their Soy milk is really strong, at least it was nice and cold.<br />

Jake also ordered the chicken satays, they came with chopped chunks of cucumber, red onion and taro to dip into the satay sauce, this was really yummy, the satay sauce was no way near as creamy as the satay we usually get back home. But really flavoursome. We must stop past for curry puffs again on our way home<br />

I've totally been missing my blogging but have been soooo busy, I'm working 6 days a week until we leave, so it doesn't leave much time for the fun stuff. But when the tummy is rumbling, we must treat ourselves to a short trip to foodie paradise also known as 'Footscray'.<br />
Jake and I have our favorites but are also keen to venture out of our comfort zones and try something new.<br />

My hunger was getting the better of me, my head was slightly throbbing, but to a beat of dumpling, dumpling, dumpling...... "Hold on Tummy it's a coming"..but what else to order? The drumming of dumpling was overwhelming me, so I gave ordering power over to Jake.<br />

Jake started to get a little carried away with his new found power, he was throwing orders at our waiter at a furious pace. The poor waiter had to kindly interrupt Jake and tell him that what he had ordered was clearly enough. A wise and professional move from the waiter as you will soon see in the following photos that Jake had ordered enough for 4, not 2. But thats why I love him, he loves food as much as I do.<br />

It was fabulous...not what you would expect from a potato salad at all. Its Tangy, the potato still has a nice bite to it, and laced with a little chilli. Its a perfect little refresher between bites, kinda like your picked Carrot and Daikon usually served on the side of a lot of Vietnamese dishes.<br />

These were awesome and only $2.50 for 2 pancakes. They were deliciously crispy and great topped with potato salad. Lamb skewer and Chicken Giblet skewer. $1.50 each. Not what I expected at all, these were heavily seasoned in what I can only describe as an African blend of spices, and spicy to boot! Really delicious but my lips were on fire.<br />
